Description
Grape variety: 100% Cannonau. The premier red grape variety of Sardinia, expressing good structure, balance, and elegance in our growing areas.
Soil: Clay and silt with significant limestone blocks.
Vineyard size: 3 hectares.
Training system: Guyot.
Vinification: Hand-harvested grapes are gently crushed. Following a cold pre-fermentation maceration, fermentation takes place in steel tanks for approximately 15 days at 25–28°C, with continuous pump-overs to facilitate the extraction of noble compounds from the skins. It remains in contact with the skins for a further 5 days during the post-fermentation phase.
Aging: In accordance with production regulations, the wine ages for 24 months, with a minimum of 12 months spent in small-to-medium-sized French oak barrels. It rests in the bottle for at least 6 months before release.
Description: A modern expression of Cannonau from southern Sardinia. It immediately reveals a gentle, elegant character through a complex, refined bouquet. Toasted notes enhance the ripe fruit, Mediterranean scrub, and sweet spices, while allowing the territory’s unique characteristics to shine through—even in this “Riserva” version. The oak influence is respectful, carrying through to the palate to deliver velvety, non-aggressive tannins; the mouthfeel is highly concentrated yet balanced by freshness and savoriness. A Cannonau Riserva with real character, offering a long, deep finish.
Food pairings: Pairs perfectly with traditional Sardinian land-based cuisine. Ideal with roasted meats such as suckling pig or lamb, or with semi-aged cheeses.
Serving temperature: 14–16°C.
